A Five Ingredient Salad to Kick-start Your Spring

It’s official!  Spring is finally here.  What better way to kick-start the season than with this quick and easy salad recipe from the world-renowned founder of the Jivamukti yoga method and the Jivamuktea Café, Sharon Gannon.  It’s simple, it’s tasty and it’s vegan. Enjoy!

Green Leaves and Sweet Pepper Salad

½ romaine heart and an equal amount arugula, chopped
½ red or yellow bell pepper, cut into small pieces
The Most Simple Dressing (recipe below) to taste
Salt and freshly ground black pepper to taste

In a large bowl, combine the greens and bell pepper. Toss with the dressing and salt and pepper to taste.

SERVES 1 TO 4

 

The Most Simple Dressing

This recipe is not prepared separately from the salad it dresses.

2 tablespoons olive oil
1 tablespoon lemon juice
Salt and freshly ground black pepper to taste

Pour the olive oil over the salad first, and gently toss so that all leaves are coated. Add the lemon juice, sprinkle with salt and pepper to taste, then toss again.

MAKES 3 TABLESPOONS
