Ahhh … Refreshing Cucumber Mint Spritzer

Inspired by the warmer weather and the abundance of herbs in my garden, I made this cool and refreshing drink over the weekend.

It’s incredibly easy and so fun to make. Just pop everything in the blender, give it a whirl, and then press the green water through a sieve.

This vibrantly colored drink can be made with flat water, but I tend to prefer sparkling when the mercury rises.

I sweetened my version with leftover Ginger-Lemongrass syrup, but feel free to use simple syrup, honey, or agave.
 

Cucumber Mint Spritzer

2 English cucumbers, seeded and chopped (about 4 cups)
Juice of 2 limes
½ cup fresh mint
2 cups water
Ice
Ginger-Lemongrass syrup, simple syrup, honey, or agave syrup
Seltzer water

Yield: 4 to 6

1. Combine the cucumbers, lime juice, mint, and water in a blender. Blend until smooth, about 30 seconds.

2. Strain the mixture through a fine mesh sieve, pressing on the solids to extract the liquid.

3. To serve, pour the mixture into a glass filled with ice, leaving 1/3 empty for the syrup and seltzer. Stir in the syrup to taste and top with seltzer.
