When I was younger, I used to groan at the idea of eating sweet potatoes. Not only did we have them often, they just seemed so boring. You couldn’t dress them up with sour cream and broccoli like regular baked potatoes.
But times have changed, and these days, sweet potatoes are the darlings of the root vegetable world. Cooks love them for their versatility, and health enthusiasts value them for their vitamins and minerals.
It’s funny that I used to think they were so simple, because now that’s my favorite way to serve them—just like in this recipe.
Oven-Fried Sweet Potato Fries
1-1 ½ pounds sweet potatoes
2 tablespoons olive oil or vegetable oil
¼ teaspoon paprika
¼ teaspoon coarse salt
Yield: 3-4 servings
1. Preheat the oven to 425°F.
2. Wash and scrub the sweet potatoes. Using a sharp knife, cut the potatoes lengthwise into ½-inch strips. Place the potatoes in a large bowl and toss with olive oil, paprika, and salt.
3. Roast in the oven for 25 to 35 minutes or until the potatoes are golden brown and crisp on the outside.
4. Serve alone or with your favorite condiment.
