Last night I was in the mood to make a new dish that I hadn’t tried before, but not in the mood to go grocery shopping. So what did I do? I turned to my trusty copy of Everyday Food: Light by Martha Stewart. If you’re looking for quick, easy recipes that are also light on the calories and don’t require a shopping trip to the depths of Whole Foods, you’ve come to the right place. Feeling very hungry after a 3.1 mile run, I decided to make a quick pasta and found a recipe for Oreccheiette with Chicken Sausage and Broccoli Rabe. This being BBL, I decided to turn it up a notch on the healthy scale and make some substitutions, like using whole wheat penne pasta instead of orecchiette. I also used broccoli instead of broccoli rabe, since I wanted to use ingredients I had around the house.
Here’s the revised recipe, along with some of my tips and pictures:
Whole Wheat Penne with Broccoli and Chicken Sausage
Prep Time: 20 Minutes
Total Time: 35 Minutes
Coarse salt and freshly ground pepper ( I love fresh ground pepper! It makes all the difference)
A pinch of red pepper flakes (My addition. I wanted to add a little kick, since I didn’t have the bitterness of the rabe)
2 pounds broccoli, cut into florets
8 ox. whole wheat penne pasta
3 chicken sausages cute into 1/4 inch slices
2 tbsp white whine vinegar
1 garlic clove, minced
1 tbsp olive oil
1. Bring a large pot of water to a boil; add salt. Add broccoli and cook for about 1 minute, until it is blanched and bright green. Use a spoon to transfer broccoli to a colander and let drain. Return water to a boil and add pasta. Cook until al dente.
2. Heat a large skillet over medium heat. A sauage, and cook until brown without turning over. Add broccoli, vinegar and garlic. Cook until broccoli is a little more tender, 2-3 minutes.
3. Drain pasta and return to the pot. Add broccoli and sausage. Add olive oil, pepper, salt and red pepper. Mix, serve and enjoy!
A delicious, quick meal for a Wednesday night!
